Corn Cotija Salad

Ingredients
- 2 15.25 oz canned sweet golden corn, drained
- 1/2 cup cilantro, chopped
- 1 jalapeño, deseeded and chopped
- 1 cup cotija cheese
- 2 tsp chili powder
- 1 lime, zested
- 1/2 tsp salt
- 3 tbsp lime juice
Instructions
- Drain corn from cans.
- Mix all ingredients in a large bowl.
- Top with a little cotija cheese.
Notes

- If you want it spicy, you can leave jalapeño seeds in the salad.
