Watermelon Cucumber Salad with Mint & Feta

Watermelon is a wonderful fruit. It’s juicy, sweet, and fairly versatile. You can grill it, dip it, blend it, whatever. It’s also a great addition to any hot summer day. This Watermelon Cucumber Salad with Mint & Feta is fresh and light with a delicate combination of flavors. Salty feta, sweet melon, subtle cucumber, tangy balsamic, and refreshing mint. It may sound weird, but don’t knock it till you’ve tried it.

Ingredients

  2. Cucumber
  3. Lime
  4. Mint
  5. Feta
  6. Balsamic

     . For my plant based or dairy free readers, this salad is great without the feta as well, it’s just a different vibe. 

. If you’re prepping this salad for a later date, leave the feta out until you’re ready to serve. The feta become wet and sort of saucy once added.

How to Make this Salad

This salad is as simple as can be. To begin on the right foot, make sure you watermelon is ripe. To do that, make sure you pick a watermelon with a yellow spot on it instead of a white one. Watermelon’s develop a white spot where they rest on the ground, and that spots turns yellow once it’s ripe. You also want to make sure when you tap it’s round middle that it makes a hollow sound.

Once you’ve got the right melon for the job, chop it up into bite sized pieces and combine it with the peeled and chopped cucumber. Squeeze in the lime juice and toss it around, then when you’re ready to serve, add you sliced mint leaves and crumbled feta cheese.

Lastly, drizzle it with a little balsamic glaze, which you can make from home or purchase. Pictured is my favorite brand of glaze, Nonna Pia’s Balsamic Glaze. It’s thick and sweet I’m fairly obsessed with this product! I add it to just about everything.

What to Pair this With

This is definitely a summer salad, so my go to is to bring this to a barbecue. However, you can also do a couple things with this salad. Either to bulk it up a bit or remove some of the inherent wetness of the salad, mix it with several handfuls of arugula leaves. You can also pair this with a nice piece of grilled fish or chicken.

Ingredients

  • 8 cups watermelon, chopped into bite sized bits
  • 2 cups cucumber, peeled and chopped into bite sized bits
  • 1 tbsp lime juice
  • 1 cup fresh mint leaves, sliced into thin strips
  • 1 cup feta cheese, crumbled
  • balsamic glaze, to taste

Instructions

  • Add your chopped melon and cucumber to a large bowl with lime juice. Toss well.
  • Add the feta and mint and toss more carefully so as not to bruise the mint and disintegrate the feta.
  • Serve immediately with a drizzle of balsamic glaze.

Notes

Macronutrients: 14g carb, 4g fat, 4g protein.
  1. If you aren't going to serve this right away, I recommend leaving the feta out until you are ready. It will get soggy and start to disintegrate if left in this very wet salad for too long. 
  2. To bulk up this salad, add a few handfuls or arugula.
