It’s super easy to make with under 10 ingredients and limited effort. In just under 40 minutes, you can have 4 servings of this cozy fall breakfast. It’s easy to meal prep and reheat, it travels well, and it incorporates this well known but underrated seasonal fruit perfectly!

Ingredients

     . The egg whites act as a binder for the apple and oats, but they also add a little protein boost. If you don’t want to buy a carton of egg whites, you can always separate the yolk from the white of your eggs at home and save the yolks for another recipe.

   . Make sure to use old fashioned oats in this recipe, not instant.

     . You can use any kind of milk you like best, but I recommend almond or oat for this since it fits the flavors of the dish a bit better.

      . You can use whatever apple you like best, but I suggest honeycrisp if it’s available. Honeycrisp apples are some of the sweetest and least mealy apples.

How to Make this Fall Bake

To start, preheat your oven or toaster oven to 425°. Prep your apple but washing, coring, and cutting it into bite sized pieces. Throw the apple bits in a bowl and mix with all your remaining ingredients. Once it’s well combined, dump it into a greased small oven safe dish and spread it out evenly. I like to use my rectangular 9×5 dish, but and 8×8 would also work, and you could also double this recipe to fill a 9×13 and prep your week of breakfasts. Regardless of what dish you use, bake this covered for 25 minutes, then remove the cover and bake uncovered for another 5-8 minutes until the top layer is crispy.

What to Pair this With

The dish can stand alone, but I recommend serving it hot or warm paired with cold yogurt and a drizzle of maple syrup. Another great option is to serve it warm and pour your milk of choice over it to have it be like a warm cereal. Delish!

Ingredients

  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/3 cup egg whites
  • 1 cup old fashioned oatmeal
  • 2 tbsp alternative milk, oat or almond recommended
  • 2 tbsp melted butter
  • 1 honeycrisp apple, cut into pieces
