Anyone on TikTok last summer witnessed the wave of ricotta toast recipes that overwhelmed the app. At first I was skeptical. There has been a trend set through the app of creating super easy recipes that don’t necessarily taste good but look good. After making a lasagna a few weeks ago though, I found I was left with a small amount of ricotta. I usually end up letting it go to waste, but this time I thought better of it and decided to try out this low risk trending food and behold, it was pretty darn good.
Is ricotta toast the most balanced or healthy? No. Is it always filling on its own? No. Do these Creamy Ricotta Toast Four Ways recipes taste delightful? Heck yeah. There is something here for everyone. We’ve go sweet, we’ve got savory, salty, fresh, herby, delicate, etc. Each of these recipes takes less than 10 minutes, has less than 10 ingredients, and is beginner friendly.

How to Make These Toasts
Each of these toast combinations have varying instructions, but the foundations are all the same: prepare your spread, prepare your topping, and toast a slice of bread. Each of these takes under 10 minutes to slap together, but sometimes the simplicity of a dish is what helps it really come alive.
To create your Caramelized Banana topping, simply take a banana, slice it into thin rounds, and fry it in a melted mixture of butter, sugar, and cinnamon. While the banana soaks up that sugary magic, stir honey and cinnamon into your ricotta cheese and toast your bread. Spread it over and when the bananas are soft and sweet, lay them over the whole thing. This is a sort of dessert for breakfast situation, but it’s freaking delicious.
The Pumpkin Spice mix is truly the easiest of the four to make. Since the topping is just pepitas, all you’ve got to do it mix your other ingredients (pumpkin, spices, and syrup) into ricotta cheese and spread it over toast. Done and dusted.
To create the Italian Basil & Egg recipe, start by creating the cheese mix by stirring ricotta with parmesan, salt, and seasoning. Fry your egg and toast your bread simultaneously. Why those cook, slice a few basil leaves into strips and once your bread is ready, spread the cheese over it, then lay down the basil, the egg, and finally, a drizzle of balsamic glaze.
Lastly, my personal favorite of the bunch: the Blackberry Basil. I love this one the most because of the balance between light and heavy. The blackberries and basil feel fresh and fun to me, while the cheese and bread feels grounding. Annnd now I’m hungry. Anyhoo, to create this, wash your berries and let them strain and dry slightly while you stir together ricotta and honey. Toast your bread, slice up a few basil leaves, and layer it all up beautifully, finishing it off with a light zesting of lemon rind.
What to Pair These with
Each recipe carries a different vibe, so the pairings could be endless. I find that the Caramelized Banana needs a fresh factor, so I like to pair it with some fresh fruit. Another option I like for this, and it doesn’t pair with the vibe all that much, is simply a hardboiled egg with dijon mustard. It adds to the overall satiation of the dish, but it also balances out a toast so sweet.
I like to eat the Pumpkin Spice toast with a pumpkin or vanilla protein shake (boring, I know, but it’s a great way to guarantee fullness). Another option with this toast is a green apple with a little bit of peanut butter.
I don’t tend to pair the Italian Egg & Basil with anything, as it has a bit of everything, but if I were to, I’d want to eat it alongside grapes or another very fresh feeling food. A fresh, watery fruit would also help balance out the salt in the meal.
Lastly, and once again, my favorite: the Blackberry Basil. Now honestly I wouldn’t pair this with anything, I’d just make two pieces. However, if you aren’t in the mood for that and searing for variety, I would try adding a veggie sausage or two and perhaps a hardboiled egg to balance sweet and savory as well as boost protein.

- 1/2 banana, sliced into 1/2" rounds
- 1 tbsp brown sugar
- 1/2 tsp cinnamon, separated in half
- 1/2 tbsp butter, preferably unsalted
- 1 tbsp part skim ricotta cheese
- 1 tsp honey
- 1 slice sourdough bread
Pumpkin Spice Ricotta Toast
- 1 tbsp part skim ricotta cheese
- 1 tbsp pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1 tsp maple syrup
- Sprinkling pepitas
- 1 slice sourdough bread
Italian Basil & Egg Ricotta Toast
- 1 egg, lightly fried with salt and pepper
- 1 tbsp part skim ricotta cheese
- 1/2 tsp grated parmesan cheese
- 1 dash salt
- 1/4 tsp Italian seasoning
- 4-5 basil leaves, sliced into strips
- 1 drizzle balsamic glaze
- 1 slice sourdough bread
Blackberry Basil Ricotta Toast
- 1 tbsp part skim ricotta cheese
- 1 tsp honey
- 5-8 fresh blackberries, washed and dried
- 4-5 basil leaves, sliced into strips
- 1 tsp lemon zest
Instructions
Caramelized Banana Ricotta Toast
- In a medium pan, melt the sugar, cinnamon, and butter. Once bubbling gently bubbling, place the banana slices and let sit to cook in the mix.
- Stir honey and remaining cinnamon into your ricotta, then spread over a toasted slice of bread.
- Flip the banana slices over and continue to cook until the outside of the banana is softened and well coated. Top on toast.
Pumpkin Spice Ricotta Toast
- While you toast your bread slice, mix together cheese, puree, spice, and syrup.
- Spread over the bread, then sprinkle with pepitas.
Italian Basil & Egg Ricotta Toast
- Fry an egg however you like in a small pan. While the egg cooks, mix ricotta with cheese, salt, and seasoning.
- Spread onto toasted bread, then layer on sliced basil leaves, the fried egg, and a drizzle of balsamic glaze.
Blackberry Basil Ricotta Toast
- While your bread toasts, stir honey into ricotta.
- Spread onto the toast, then add your basil slices and fresh blackberries. Top with zested lemon.
