Corn Cotija Salad

Ingredients

  • 2 15.25 oz canned sweet golden corn, drained
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, deseeded and chopped
  • 1 cup cotija cheese
  • 2 tsp chili powder
  • 1 lime, zested
  • 1/2 tsp salt
  • 3 tbsp lime juice

Instructions

  • Drain corn from cans.
  • Mix all ingredients in a large bowl.
  • Top with a little cotija cheese.

Notes

  1. If you want it spicy, you can leave jalapeño seeds in the salad.
