True Banana Pancakes

Ingredients
- 2 bananas, ripe
- 1 egg
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tbsp butter, spray or oil a fine substitute
Instructions
- Peel bananas into a bowl, then mash well with a fork.
- Add the egg and mix, then stir in cinnamon and vanilla and mix again.
- Pour 4" rounds into a heated and greased frying pan.
- Cook on medium high heat about 2 minutes, until the bottom has solidified, then flip and cook another minute or two.
- Plate and top with fresh fruit, maple syrup, or nuts and enjoy!
