True Banana Pancakes

Ingredients

  • 2 bananas, ripe
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tbsp butter, spray or oil a fine substitute

Instructions

  • Peel bananas into a bowl, then mash well with a fork.
  • Add the egg and mix, then stir in cinnamon and vanilla and mix again.
  • Pour 4" rounds into a heated and greased frying pan.
  • Cook on medium high heat about 2 minutes, until the bottom has solidified, then flip and cook another minute or two.
  • Plate and top with fresh fruit, maple syrup, or nuts and enjoy!

Notes

Macronutrients: 51g carb, 11g fat, 9g protein. 
    1. Make sure your bananas are nice and ripe. You want them not completely brown, but very spotted.
    2. To bump up protein, top with pumpkin seeds or pair with some sausage or bacon.
