Chocolate Zucchini Brownies

Ingredients

  • 1/3 cup salted butter, melted
  • 3/4 cup granulated sugar
  • 2 cups zucchini, shredded (roughly 1 zucchini)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 375°.
  • In a large bowl, combine butter, sugar, shredded zucchini, vanilla, and eggs.
  • Mix in dry ingredients until well combined, then stir in the chips and nuts.
  • Pour evenly into a greased casserole dish and bake 45-50 minutes or until a toothpick comes out of the center cleanly.

Notes

  1. To shred the zucchini, use a regular cheese grater. No need to peel it; just wash and dry before shredding!
  2. I like to use half dark chocolate and half white chocolate chips, but you can use whatever kind you'd like.
  3. If you are a more meticulous baker than I am, mix your dry and wet ingredients in separate bowls before combining in one.
