Instructions
Preheat oven to 375°.
In a large bowl, combine butter, sugar, shredded zucchini, vanilla, and eggs.
Mix in dry ingredients until well combined, then stir in the chips and nuts.
Pour evenly into a greased casserole dish and bake 45-50 minutes or until a toothpick comes out of the center cleanly.
Notes

To shred the zucchini, use a regular cheese grater. No need to peel it; just wash and dry before shredding!
I like to use half dark chocolate and half white chocolate chips, but you can use whatever kind you'd like.
If you are a more meticulous baker than I am, mix your dry and wet ingredients in separate bowls before combining in one.
