Avocado Toast with Fried Eggs

Ingredients
- 2 slices sourdough bread, toasted
- 1/2 avocado fruit, mashed
- 2 eggs, fried
- 1/4 tbsp butter, can use any nonstick pan method
Optional Toppings
- 1/2 cup sprouts, radish preferred,
- 10 cherry or grape tomatoes, cut in half
- 2 tbsp cotija cheese, crumbled
- 1 tsp red pepper flakes
Instructions
- Heat a medium nonstick pan on medium heat with a small slice of butter.
- When pan is heated, crack both eggs into the pan and sprinkle with salt and pepper.
- While eggs cook, start toasting the sourdough bread.
- Fry eggs to your personal preference, then turn the heat off.
- Spread mashed avocado into the toasted bread, then top with optional ingredient pairings and slide the fried egg on top.
