Avocado Toast with Fried Eggs

Ingredients

  • 2 slices sourdough bread, toasted
  • 1/2 avocado fruit, mashed
  • 2 eggs, fried
  • 1/4 tbsp butter, can use any nonstick pan method

Optional Toppings

  • 1/2 cup sprouts, radish preferred,
  • 10 cherry or grape tomatoes, cut in half
  • 2 tbsp cotija cheese, crumbled
  • 1 tsp red pepper flakes

Instructions

  • Heat a medium nonstick pan on medium heat with a small slice of butter.
  • When pan is heated, crack both eggs into the pan and sprinkle with salt and pepper.
  • While eggs cook, start toasting the sourdough bread.
  • Fry eggs to your personal preference, then turn the heat off.
  • Spread mashed avocado into the toasted bread, then top with optional ingredient pairings and slide the fried egg on top.
