Chocolate Zucchini Brownies

Ingredients
- 1/3 cup salted butter, melted
- 3/4 cup granulated sugar
- 2 cups zucchini, shredded (roughly 1 zucchini)
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup unsweetened cocoa powder
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup walnuts, chopped
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 375°.
- In a large bowl, combine butter, sugar, shredded zucchini, vanilla, and eggs.
- Mix in dry ingredients until well combined, then stir in the chips and nuts.
- Pour evenly into a greased casserole dish and bake 45-50 minutes or until a toothpick comes out of the center cleanly.
Notes
Macronutrients: 65g carb, 25g fat, 8g protein.
- To shred the zucchini, use a regular cheese grater. No need to peel it; just wash and dry before shredding!
- I like to use half dark chocolate and half white chocolate chips, but you can use whatever kind you'd like.
- If you are a more meticulous baker than I am, mix your dry and wet ingredients in separate bowls before combining in one.
