Strawberry Rhubarb Chia Jam

Ingredients

  • 1 cup rhubarb stalks, cut into 1" cubes
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 2 cup strawberries, cut into quarters
  • 1 tbsp lemon juice
  • 1/3 cup chia seeds

Instructions

  • In a saucepan, bring rhubarb, water, and sugar to a boil.
  • Once boiling, add the strawberry. Partially cover and simmer 10 minutes.
  • Turn heat off, add juice and seeds, and stir until well combined.
  • Pour into a sealable container and let rest in the fridge at least 15 minutes as the seeds soak up the moisture.
