Strawberry Rhubarb Chia Jam

Ingredients
- 1 cup rhubarb stalks, cut into 1" cubes
- 1/2 cup water
- 1/4 cup granulated sugar
- 2 cup strawberries, cut into quarters
- 1 tbsp lemon juice
- 1/3 cup chia seeds
Instructions
- In a saucepan, bring rhubarb, water, and sugar to a boil.
- Once boiling, add the strawberry. Partially cover and simmer 10 minutes.
- Turn heat off, add juice and seeds, and stir until well combined.
- Pour into a sealable container and let rest in the fridge at least 15 minutes as the seeds soak up the moisture.
