2cupscucumber,peeled and chopped into bite sized bits
1tbsplime juice
1cupfresh mint leaves,sliced into thin strips
1cupfeta cheese,crumbled
balsamic glaze,to taste
Instructions
Add your chopped melon and cucumber to a large bowl with lime juice. Toss well.
Add the feta and mint and toss more carefully so as not to bruise the mint and disintegrate the feta.
Serve immediately with a drizzle of balsamic glaze.
Notes
Macronutrients: 14g carb, 4g fat, 4g protein.
If you aren't going to serve this right away, I recommend leaving the feta out until you are ready. It will get soggy and start to disintegrate if left in this very wet salad for too long.
To bulk up this salad, add a few handfuls or arugula.
